Sting ray with salted vegetables cooked with the electric lunch box

First time cooking the sting ray with salted vegetables and I decided to use the electric lunch box.

1. Soak the salted vegetables in water for about 10 minutes to get rid of the salt.

2. Cut the salted vegetables in thin strips.

3. Rub some salt onto the sting ray and wash them cleanly.

4. slice some ginger and set aside

5. Mashed a tablespoon of fermented soya bean paste

6. Add the ginger slices and fermented soya bean paste, the salted vegetables and tomatoes into the sting ray

7. Add some sugar to taste (This is suppose to be a salty dish but I do not like it to be too salty)

8. Pour one bowl of HOT water into the base of the electric lunch box

9. Steam the dish for about 45 minutes.

Steamed ketchup prawns and steamed tofu using the electric lunch box

Another experiment dishes with my electric lunch box. So convenient, no messy kitchen.

Did some ketchup prawns and steam tofu with minced pork in the electric lunch box.

Recipe for ketchup prawns

1. Trim off legs of prawns and devein but keep the shells on.

2. Clean and wash prawns

3. Add about 3 to 4 tablespoon of ketchup to the prawns in the steaming bowl.

4. Add 1 teaspoon of sugar to the prawns.

5. Add 1 teaspoon of rice vinegar to the prawns.

Recipe for tofu with minced pork

1. Add some oyster sauce and sesame oil to the minced pork.

2. Put minced pork over the tofu in steaming dish.

Put one bowl of HOT water into the base of the electric lunch box and placed both the ketchup prawns and tofu dishes into the electric lunch box.

They should be cooked in about 30 minutes. Garnish both dishes with spring onions and fried shallots.

Steamed Chicken Rice using the Electric Lunch Box

Made an easy steamed chicken rice with my electric lunch box.

1. Wash one cup of rice.

2. For the size of my chicken drumstick, I added about 65 ml of water into the rice. Normaly rice cooking, is one cup of rice and one cup of water but for this recipe cause I am steaming the chicken drumstick together with the rice, some moisture will be produced by the chicken drumstick as chicken stock. Depending on the size of your chicken drumstick, do not add more than 70 ml of water as the rice will be very soggy.

3. Trim off all the fats of the chicken drumstick and wash the chicken drumstick, then add handful of salt all over the chicken drumstick and placed inside the steaming bowl together with the rice.

4. Tie few stalks of pandan leaves into a knot and add some slices of ginger into the rice. (If pandan leaves are unavailable, can substitute with spring onion.)

5. Add one bowl of HOT water into the base of electric lunch box and the chicken rice will be cooked in about 30 minutes.

6. For plating, remove the pandan leaves and ginger and serve the chicken and rice on a plate and add some vegetables as side

7. For condiments, I used some dark soya sauce, ginger sauce and chilli.

8. Yummy.

Steamed Glutinous Rice (Easy and Lazy Way)

I created an easy and lazy way to steam glutinous rice.

1. Measure 1 cup of glutinous rice, wash and drain the rice.

2. Add glutinous rice, canned braised peanuts, dried shrimps (wash and soak earlier), and half teaspoon of salt (or to taste) to the steaming bowl.

3. Add some hot water into the steaming bowl, enough water to cover the rice.

4. Add one and half bow of HOT water into the base of electric lunch box.

5. The rice should be cooked in less than an hour.

6. Topped the rice with some roasted nuts and fried shallots and some chopped spring onions.

Steamed chicken with pumpkin using the electric lunch box

My electric lunch box is really very useful, I just prepared the ingredients and the electric lunch box do the cooking.

1. Cut pumpkin into cubes.

2. Add 1 tablespoon of oyster sauce to chicken wings

3. Add 1 teaspoon of dark soya sauce to chicken wing for colour.

4. Add 1 teaspoon of light soya sauce to chicken wing

5. Add 1 teaspoon of sesame oil to chicken wing

6. Add 1 teaspoon of sugar or to taste to chicken wing

7. Marinate the chicken for at least 30 minutes.

8. Add minced garlic, pumpkin and chicken wings into the steaming bowl.

9. Add some water to the dish

10. Pour about two rice bowl of HOT water to the base of the electric lunch box

After about 30 minutes, I check on the texture of the pumpkin, is was still not soft, I removed the first dish of cooked steamed egg first, then I continued to cook the chicken wing with pumpkin for another 20 to 30 minutes or till the pumpkin are soft to liking.

11. Served with rice - yummy

Steamed Sardines using the electric lunch box

Instead of the usual way of stir frying my sardines, I decided to steam them with the help of my electric lunch box. It is much healthier and the cooking area is not so messy. I dont even need to do the cooking, the electric lunch box did all the cooking.

1. Pour canned sardines into the steaming bowl.

2. Add sliced onions and tomatoes

3. Add some ketchup

4. Mixed them together

5. Pour one and half bowl of HOT water into the base of the electric lunch box

6. They should be cooked in about 30 minutes.

7. Serve with rice.

How to cook rice in a electric lunch box

Cooking rice in a rice cooker is very easy but this time, I decided to cook using the electric lunch box.

Using the cup from the electric lunch box set, I measured one cup of rice, wash them and using the same cup to add one cup of water to the washed rice. The portion is 1:1 (1 cup water to 1 cup rice).

Then I added 3/4 rice bowl of HOT water (dont use cold water , will take a longer time to cook, HOT water will quicken the cooking time).

The rice should be cooked in under 30 minutes. The electric lunch box will auto shut off when the water in the base of the electric lunch box dried up or if you have a time setting in your electric lunch box, adjust to about 30 minutes cooking time.
